Before I get to today’s recipe, I just want to remind you all that our campaign to raise money for women’s safety in India is in its final fortnight. Anyone who knows me knows that apart from dark chocolate, I don’t really enjoy dessert. I’d rather spend my calories on red wine or fried savory stuff. Sadly, my husband is the opposite. He

After four years of unsuccessfully nagging him about the evils of store-bought dessert, I decided to be the change and bake healthier versions at home. I figured he’s home three days a week, so at two pieces a day, one small cake would last us a fortnight.
Wrong! My homemade cakes are being demolished in 48 hours, and if you try the following recipe, you will know why!
Recipe adapted from here; makes approximately 12 pieces.
20 medjool dates - pitted
1 ½ cups whole wheat pastry flour
1 ½ cups almond milk
½ cup margarine
¼ cup brown sugar
2 tbsp cinnamon sugar
1 flax egg
1 tsp baking soda
¼ cup walnuts – roughly chopped
Pre-heat oven to 350 F.
Mix dates & almond milk in a bowl and microwave for 45 secs. Stir & microwave for another 45 secs. Remove and set aside to cool.
Grind the cooled mixture with margarine, brown sugar & cinnamon sugar until it forms a smooth paste. Transfer to a large mixing bowl.
Stir in the flax egg.
Sift together the flour & baking soda. Add it to the mixing bowl by the tablespoon, slowly mixing everything so it isn’t lumpy.
Stir in walnuts.
Line a round cake pan with parchment paper. Pour in the mixture and spread it evenly. If desired, top with a few more walnuts.
Bake for 40 mins or until a knife inserted in the center comes out clean.
Enjoy with a cup of tea.
